Very Berry Chia Pudding

Serves 2 but will keep in the fridge for up to 3 days


  • 400 mL Almond or Coconut milk
  • 1/3 Cup white chia seeds
  • 1/2 tsp vanilla bean paste
  • 1 tsp ground cinnamon
  • 1/2 cup frozen mixed berries


  1. In a mixing jug combine milk, chia seeds, vanilla and cinnamon, whisk until combined
  2. Cover and refrigerate for 30 minutes.
  3. Whisk through frozen berries, cover and allow to set for a further 30 minutes
  4. Remove from fridge and whisk again, then divide the mix into two bowls, cover and refrigerate overnight
  5. Serve with a drizzle of honey or maple syrup and a scattering of slivered almonds
